The Main Ingredients comprise information based on the UK Nutrient Databank.
Also known as ‘McCance & Widdowson’ (7th Edition). These have been modified with the 2019 update.
The Supplementary Ingredients are other ingredients, which are commonly used in food manufacturing, but which so far have not appeared in the official database.
These include several ‘e-numbers’.
The USDA ingredients are based on the American database. Some of the entries are duplicated in the UK file, but it is larger than the UK file and does have some useful entries.
Raw meat information is taken from the UK Nutrient Databank and the UK Meat Products Regulations 2003.
Where necessary, nutrition values have been re-calculated in line with the requirements of the Food Information Regulation 2011.
What if I have an ingredient which is not found in any of those files?
You can enter this into My Ingredients. Alternatively, it may be entered under Sub-Recipes and used like single ingredients.
