The vast majority of the time, the ingredients you add into NutriCalc will just be added as a New Ingredient and be stored in your My Ingredients file.
Your supplier will give you a specification sheet with the nutrition information and ingredient declaration with the allergens and you will enter these into the database thus:
- Select New Ingredient under the Ingredient Center
- Choose either General Ingredient or Meat Cut Ingredient
- Enter the name of the ingredient that you want to use internally (this can be a code)
- Either type in or copy and past the list of ingredients within the product into the labelling name like this: Plain Flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin). What you type here will appear in your ingredient declaration
- Enter the nutrition information you have been given paying heed to any warning triangles that the software flags as possible problems or omissions (click on the triangle for more info)
- Enter the allergen information checking that everything you expect to see is there (if Soy is in the list of ingredients for example, check that the allergen has been ticked)
- Use the Details tab to enter further information where appropriate if needed/wanted
- Save
A compound ingredient can only be entered where you are given a list of ingredients and either an accurate quantity for each ingredient or a bandwidth (e.g. 25-35%) for each ingredient as well as a nutrition table. You will also need to know the allergens within each ingredient
The ingredients within the product don't have to be recognized or contained in NutriCalc and the main benefit is to enable the software to accurately place the ingredients within the ingredient declaration and QUIDs. i.e. unless the software knows how much of each ingredient is within the bought in product, it can't add like for like ingredients together.
To enter a Compound ingredient:
- Select New Ingredient under the Ingredient Center
- Choose either General Ingredient or Meat Cut Ingredient
- Enter the name of the ingredient that you want to use internally (this can be a code)
- Ignore the labelling name in this section as this appears later
- Enter the nutrition information you have been given paying heed to any warning triangles that the software flags as possible problems or omissions. (click on the triangle for more info & guidance)
- Select the Compound Ingredient tab from along the top bar
- Enter the labelling name of each ingredient and its quantity
- Using the three dot menu to the left of each ingredient, complete the allergen information for each
- Use the details tab to enter further information where appropriate if needed/wanted
- Save
