To do this go to the Recipe Center
- Open the specific Recipe
- Go to the Details tab
- Check the box for Specific Gravity
- Enter the Overrun as a percentage
The specific gravity is recalculated and displayed.
How do I go back to ‘per 100g’?
To do this simply remove the check next to the Specific Gravity.
What is overrun?
When freezing ice cream, air is homogenised with the mix. Overrun is the ratio of volume of air to the volume of the mix, so an overrun of 50% means 5 litres of air has been added to every 10 litres of mix.
