EU/UK
According to the EU Food Labelling legislation 1169/2011, energy (kilojoules and kilocalories) needs to be calculated according to the following factors:
Fat: 37 kJ/g (9 kcal/g) +
Available Carbohydrate (except polyols): 17 kJ/g (4 kcal/g) +
Protein: 17 kJ/g (4 kcal/g) +
Alcohol: 29 kJ/g (7 kcal/g) +
Polyols: 10 kJ/g (2.4 kcal/g) +
Fibre: 8 kJ/g (2 kcal/g) +
Note: It is common for calculations of energy to be based only on fat, protein, available carbohydrate and fibre, especially when the values have been obtained by lab analysis. This gives the wrong values if polyols, alcohol, or organic acids are present. This affects recipes containing significant quantities of sorbitol, wine, vinegar etc.
NutriCalc offers two methods for calculating kJ and kcal:
- When selecting Calculation: EU/UK, NutriCalc will use the factors above to calculate kilocalories and kilojoules.
- When selecting Calculation: None, the kilocalories and kilojoules will equal the summed values of the ingredients used in the recipe.
USA
In the US, calories are also calculated using factors and ingredient addition.
Using the 4-4-9 factors:
Protein: 4 cal/g
Carbs: 4 cal/g
Fat: 9 cal/g
NutriCalc offers two methods for calculating calories for the US:
- When selecting Calculation: US, NutriCalc will use the factors above to calculate calories.
- When selecting Calculation: None, the calories will equal the summed values of the ingredients used in the recipe.
