The fruit content of preserves is calculated as the total amount of fruit used in the process. This includes any waste material, stalks, leaves, peel, etc. that has to be discarded.
To do this, go to the Recipe Center, open the required Recipe, then Reports.
Enter the recipe and ensure any cook loss, which may be large. Do this by clicking the Details tab, and enter he amount of Cook Loss.
To obtain the fruit content, click Reports and Fruit Content of Preserves.
Identify the fruits in the recipe and give them the desired name and % waste (if any).
To do this, click on the vertical ellipsis action menu and select Manage Ingredient Data.
Select the required fruit by clicking View.
Add the fruit name and % of waste (if any), then click Save.
Once the information is entered, go back to the Fruit Content of Preserves report for the recipe. The ingredient information is now displayed, together with a summary and a statement of 'Prepared with...g of fruit@ for labelling the product.
