Once the recipe is entered, together with the ingredient quantities, the costings for the recipe can be obtained by clicking on Reports, then click Costings.
The Ingredient Cost Breakdown (per 100)
The first two columns display the ingredient name and quantities.
The third column lists the costs of the ingredient per kg as entered previously.
The final column of the table gives the contribution of each individual ingredient per selected weight to the cost of the recipe. The initial selected weight is the total as on the recipe page.
At the bottom appears the overall recipe cost per selected weight and per 100 units of that selected weight.
Change the selected weight and the number of units
- Open the selected Recipe
- Under the Details tab the Report Weight (g) and Number of Units can be adjusted
Note: Remember to click Save after making any adjustments.
Edit the ingredient costs
- Open the recipe
- Click on the vertical ellipsis in the upper right of the screen
- Select Manage Ingredient Data
- Click View for an ingredient and enter the Cost per kg on the Details tab
Or, without a recipe, go into the Ingredient Center, search for an ingredient and enter the Cost per kg on the Details tab.
What about cook losses?
If it costs 40p to make an uncooked 100g portion of a product and a 50% cook loss is applied, then it will cost 80p to make a cooked 100g portion. So if a cook loss has been entered for the recipe, the values for cost per serving and per number of units are adjusted to take the loss into account. Also the contributions are adjusted automatically.
