The Ingredient Declaration provides an ingredient listing as required by EU, US, Canada, and other regulations labeling legislation.
It accurately does the following:
- Maps, if entered, the labeling names for the ingredients
- Converts quantities to percentages
- Merges like ingredients in recipe and sub-recipes
- List ingredients by weight in descending order
- Allows the user to identify a ‘QUID’ entry
- Displays allergens, if present
What is a 'labeling name'?
An ingredient in the database has the name ‘egg, chicken, white, raw.' This name would not be suitable for an ingredient declaration. Instead, enter a simplified, commonly-used name for how the ingredient should appear in the ingredient declaration.
How do I deal with single ingredients, sub-recipes, and compound ingredients?
My Ingredients include:
- single ingredients
- sub-recipes that we make up ourselves
- compound ingredients (mixtures that we buy in already made up).
How does NutriCalc® deal with these?
Single ingredients are straightforward, except that the name of the ingredient in the recipe may not be suitable for labelling purposes. For example, the name ‘red peppers’ would be used instead of ‘peppers, capsicum, red, raw’.
Sub-recipes are just collections of single ingredients, which are added to the main recipe listing.
Their quantities are calculated from the % of the sub-recipe in the main recipe and the quantity of the ingredient in the sub-recipe. NutriCalc expands these into the full listing.
Compound Ingredients may be handled in one of two ways:
- If you know the ingredients but not the quantities, all you can do is to give the name of the compound ingredient followed by its ingredients in brackets.
For example: Strawberry Jam (Strawberries, Sugar, Lemon Juice, Gelling Agent: Pectin) - If you know both the ingredients and their quantities (or approximate quantities), these may be entered and saved as a compound ingredient. The ingredients within the compound ingredient are then added to the main recipe listing (and the name of the ingredient itself disappears).
Ingredient Names
The Main and Supplementary database entries contain Labeling Names for a lot of ingredients. These can be changed by the user, if desired.
My Ingredient labeling names need to be entered by the user. There is a limit of 1200 characters for the labeling name.
To enter a Labeling Name into the file directly you will need to go to the Ingredient Center, and type the needed text into the Search field.
From the displayed information select the ingredient from the list and click View, then in the Name tab, type into the Labeling Name field.

How do I use the compound tab?
If you do not have the quantities for its ingredients, simply enter it as described above, with its ingredients in brackets.
If you have the quantities, click the Compound tab to enter the ingredients and quantities.
Type in the name of each ingredient as you want it to appear on the label.
This is not a search, you are just typing in text. Then Add the quantity in the Qty field.
The allergen values must be entered for each ingredient in the compound ingredient (even if there are no allergens present).
To do this, click on the vertical ellipsis next to each one and enter the values.
