When calculating nutrition on your recipe, NutriCalc® checks some aspects of the data. If any data are suspect, a warning/guide triangle is displayed.
The program looks at the nutrition values and searches for obvious anomalies in;
- Energy (kcal) [corresponds with fat, protein, carbohydrate, polyols, fibre, alcohol & organic acids]
- Energy (kJ) [corresponds with fat, protein, carbohydrate, polyols, fibre, alcohol & organic acids]
- Fat [saturates, mono and poly correspond with fat]
- Available Carbohydrate [sugars, starch and polyols correspond with carbohydrate]
- Dietary Fiber
- Sodium
- Moisture
For example:
The sugars and starch do not add up to the available carbohydrate.
You can see which ingredient(s) might be causing this by clicking on the > symbol next to the nutrient name. This will expand the entry showing a list of ingredients in the recipe.
In this case, it's the glucose syrup that is responsible.
You can look at the data for that ingredient by clicking the Recipe tab, followed by the vertical ellipsis symbol next to the ingredient and then View Ingredient.
If an ingredient is queried, it may be that data entered are missing or faulty.
Or it may be due to unusual effects seen with some ingredients.
For this Glucose Syrup, the Sugars are 55 and the Starch and Polyols are 0, which does not total 78.
However, glucose syrups contain a lot of oligosaccharides which are not counted as sugars.
So the data is fine and the warning can be ignored.
The warnings are a guide and may sometimes produce 'false-positives'. You may be able to reduce these by labelling some of your My Ingredients 'Verified'. For additional information, please refer to this article: Verified Ingredient
